Hypothetically, if every single country were to switch to the US dollar, what benefits would we receive from trade and other things?

If every country switched, there would be much more demand for the dollar. Your dollar would be able to buy you much more since its value relative to other things has increased. The opposite would apply if the dollar lost its global reserve currency status.
